About HIKARI
Hikari Miso was founded in Shinshu (Nagano, Japan) in 1936. Surrounded by the pristine Japanese Alps, Shinshu is blessed with the abundant source of pure and clear snowmelt from the mountains. The mountain water is used to steam and boil the soybeans and rice for making miso, resulting in high quality miso with rich flavour.
